Honey Mascarpone Frosting

Made some #valentines day cupcakes with Honey Mascarpone Frosting. I prefer this frosting because it’s not super sweet, is made with heavy cream instead of butter and no confectionery sugar (which I personally hate). If your interested check out the recipe on my blog.

Stir together

2 tbl Meringue Powder with

2 tbl Warm water and let it sit for 30 seconds.

Mix in

1/4 cup honey

8 oz Mascarpone Cheese and whisk (or use beaters) on medium speed until all is combined and it starts to look fluffy. Turn the whisk on high and pour in

2 cups Heavy Whipping Cream. Watch for the mix to start to hold the ripples. Once you get to that point check to see if it stiff beaks form while the frosting still looks smooth. If it’s still soft, whisk a few seconds at a time till they form. If you over do it the mix will curdle and you will be left with sweet butter.
