These cookies are sweet, salty, chewy & Gluten Free!
First step is to take out
1/2 cup (1 stick) Unsalted Butter
before you start so they can come up to room temperature. Give the at least 1 hour.
Preheat oven to 350 and line two sheet pans with parchment or use a nonstick Pan.
Cream together with beaters or in mixer with paddle attachment,
1 cup Packed Brown Sugar
1 cup White Sugar
with the softened Butter till well combined and looks like fluffy sand.
Next blend in one Egg at a time, once combined add in
2 cups Natural Peanut Butter (smooth or chunky fine)
2 tsp Baking Soda
1 tsp Salt (use 1/2 tsp if using conventional peanut butter) and blend until smooth.
Fold in with a spatula or spoon,
4 cups Oats ( I use 2 cups Rolled Oats and 2 cups Quick Oats, because I like the combination of different texture )
1/2 cup Crushed Potato Chips
1 cup Mini Chocolate Chips
1 cup Milk Chocolate Candy
( You can add what ever junk food you like. If your not Gluten Free you could substitute Pretzels instead for the Chips. You can use different candy or chocolate chips, just make sure the combined measurement is around 2 3/4 - 3 cups of flavor filler!)
I suggest using a 3 tbl scoop but if you don’t have one make a mound around 3 tbl and place on your pan, do not press down.
Bake in the oven for 15 minutes, remove from the oven and let them rest for about 5 minutes before transferring them to a cooling rack or they will jus crumble when moved.
This batch makes 36 cookies.
